Recipe for Watermelon Coconut Margarita. This refreshing summer cocktail was developed by Chef Harry Schwartz for the National Watermelon Promotion Board.


  • 2 cups seeded watermelon chunks
  • 2 ounces coconut flavored rum
  • 1/2 cup shredded coconut
  • juice from 1 fresh lime
  • 1 cup ice


  1. Makes 1 Margarita
  2. Place all ingredients in a blender and blend until smooth. Pour into a sugar rimmed glass. Garnish with "watermelon swizzle sticks" as shown in photo, if desired.
