Author Notes: These cucumbers, because they can be made so far in advance, make a wonderful salad or side dish for a picnic. The sugar adds another layer of flavor but you can get away without it for those needing to limit sugar intake. I usually use plastic zipper storage bags to marinate food, which saves room in the refrigerator and makes the dish easy to pack for picnics or brown bag lunches.
Ingredients: 2 large cucumbers, peeled and thinly sliced
1/3 cup rice vinegar
1/2 teaspoon salt
2 teaspoonsugar (optional)
2 teaspoon fresh ginger, grated
Instructions:

Place cucumbers in a bowl or plastic zipper bag. Combine remaining ingredients and pour over cucumbers. Chill overnight, mixing occasionally.
