Pineapple Chutney

Recipe for Pineapple Chutney. This flavorful chutney is great on grilled fish sandwiches, but you can use it in a variety of ways.

Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 red bell pepper finely diced
  • 1/2 red onion finely diced
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon minced hot red chile
  • 1 tablespoon curry powder
  • 2 cups fresh pineapple medium diced
  • 1/2 cup white vinegar
  • 1/4 cup orange juice
  • 1/3 cup brown sugar
  • 1 teaspoon salt

Directions

  1. In a 12" sauté pan, heat oil over medium-high heat until hot. Add red pepper and onion and sauté 5 to 7 minutes stirring constantly. Add ginger, chile, and curry powder. Sauté one minute. Add pineapple, white vinegar, orange juice, brown sugar and salt. Reduce heat to medium low and simmer 10-15 minutes (or until liquid is reduced by half)-remove and cool to room temperature.
