A zippy peach soup that is perfect for a hot summer evening. Use fresh ginger root for that extra kick.
- 3 1/2 pounds fresh peaches - peeled, pitted and diced
- 1 teaspoon ground ginger
- 1 1/3 cups heavy cream
- 2 tablespoons rum
- Puree the peaches and ginger together in a food processor or blender.
- Stir in heavy cream and rum.
- Chill. Serve cold immediately.
