Mushroom paté

Recipe for Mushroom Pate. This savory vegetarian paté is wonderful for entertaining served on crackers, crusty bread or even on raw vegetables. This is also a terrific picnic component.


  • 4 tablespoons butter
  • 1 cup finely chopped fresh mushrooms
  • 1/4 cup shallots, finely chopped
  • 1/4 cup white wine
  • 1/4 cup vegetable stock
  • 2 scallions, white and green parts, minced
  • 8 ounces cream cheese
  • salt pepper to taste


  1. In a large skillet, melt butter and sauté the mushrooms and shallots for 3 to 5 minutes or until tender. Add the wine and stock and simmer until the liquid has been absorbed. Remove from the heat and transfer to a bowl. Add the cream cheese, salt, pepper, and minced scallion. Mix thoroughly.
  2. Serve warm or chilled.
