Ingredients

  • 3 tablespoons butter
  • 3 cups stone-ground cornmeal
  • 1 cup flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 cups milk

Directions

  1. Preheat oven to 425° F.
  2. Melt butter in a heavy iron skillet. Put dry ingredients in a large bowl and mix. Lightly beat egg in a small bowl and pour in milk. Pour into dry ingredients and stir until just blended. Add more milk if mixture is too dry. Quickly pour into hot skillet. Bake for 25-30 minutes or until a straw inserted in the middle comes out clean. Serve hot from oven.
