Mexican Meatloaf

This meatloaf recipe will get your taste buds hopping. If you like Mexican/American food then you have to make this recipe.


  • 1 tablespoon olive oil
  • 1/4 cup finely chopped onion
  • 1 garlic clove, minced
  • 1/2 pound ground beef
  • 3 ounces soft chorizo, removed from casing and crumbled
  • 1 poblano chile, roasted, peeled and diced
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1 egg, well beaten
  • 1/4 cup ketchup
  • 1/4 cup mexican sour cream
  • 1/2 cup bread crumbs
  • salt and pepper to taste
  • 2 medium tomatoes, cored and seeded
  • 1/4 medium white onion
  • 2 garlic cloves
  • 1 serrano chile
  • 1/4 cup brown sugar
  • 1 canned chipotle chile in adobo sauce, minced
  • 1 tablespoon yellow mustard
  • salt to taste
  • Meatloaf: Glaze:


  1. Preheat oven to 375 degrees.
  2. In a heavy skillet, add the oil and heat over medium-high heat.
  3. Add the onion, cook until soft, then add the garlic.
  4. Set aside until cool enough to handle.
  5. In a large bowl combine the sauteed onion and garlic, ground beef, chorizo, and diced poblano chile.
  6. In a medium bowl combine salt, pepper, cayenne, cumin and egg.
  7. Add the ketchup and sour cream.
  8. Mix well with fork and pour it on top of the mixed meats.
  9. Sprinkle with bread crumbs and mix thoroughly with clean hands.
  10. Put the mixture into a 9x13-inch loaf pan.
  11. Bake unitl a thermometer inserted into the center reads 160 degrees, about 40-45 minutes.
  12. remove from the oven and carefully pour off and pan juices.
  13. Meanwhile, heat a heavy skillet over high heat.
  14. Add the tomatoes, onion, garlic cloves, and serrano chiles.
  15. Cook, turning frequently, until lightly charred on all sides.
  16. Add the charred ingredients to a blender.
  17. Pulse unitl chunky, then pour into a small skillet.
  18. Stir in sugar, chipotle chile and mustard.
  19. Bring mixture to a boil over medium heat.
  20. Cook unitl slightly thickened.
  21. Season with salt to taste.
  22. Slice the meatloaf and spoon over the glaze.
