Recipe for Low Carb Spinach Salad with Strawberry Poppyseed Dressing. A perfect pleasure while watching your carbohydrates!

Ingredients

  • Strawberry Poppyseed Dressing:
  • 1 cup sliced fresh strawberries
  • 1/4 cup red wine vinegar
  • 1 tablespoon agave syrup (nectar)(or 1 tablespoon + 1 teaspoon Splenda® or alternative sweetener)
  • 1 teaspoon poppyseeds
  • 1/2 teaspoon dry mustard
  • 1/2 cup canola oil
  • Salad:
  • 5 cups torn fresh spinach, washed and dried
  • 1 1/2 cups sliced fresh strawberries
  • 1 cup sliced celery (about 2 ribs)
  • 2 spring onions, thinly sliced

Directions

  1. Makes 4 Servings of Salad and 1 Cup Dressing
  2. Blend all dressing ingredients with a hand blender, blender or food processor. Refrigerate.
  3. Place the salad ingredients in a serving bowl. Add about half the dressing just before serving and toss. Refrigerate remaining dressing for later.
