Easy, healthy pasta recipe. This Light Pasta Fresca recipe is perfect healthy and quick and easy dinner for busy weeknights. Make this recipe even healthier by using whole-wheat penne pasta.


  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 cups diced tomatoes
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground pepper
  • 2-ounces fresh mozzarella, cubed
  • 1/2 pound mini penne, cooked according to package directions
  • 2 tablespoons freshly grated Parmesan


  1. Heat olive oil in small frying pan over medium heat; add garlic and cook, stirring frequently, for 1 minute.
  2. Stir in diced tomatoes and cover, stirring occasionally, for 4 minutes; stir in basil, salt, and pepper and cook for an additional 4 minutes; add mozzarella cubes and stir, quickly removing from heat.
  3. Pour the tomato mixture over the pasta and toss to mix; serve garnished with Parmesan cheese.
