  • 1 cup finely diced fresh pineapple
  • 2 tablespoons finely chopped fresh cilantro
  • 2 tablespoons finely chopped Vidalia or Bermuda onion
  • 2 tablespoons finely chopped green onion
  • 1 teaspoon honey
  • Dash cayenne pepper
  • 1/2 fresh jalapeno pepper (seeds and ribs removed), minced, optional
  • 2 tablespoons freshly squeezed lime juice
  • ½ teaspoon lime zest
  • Kosher salt to taste


  1. Combine all ingredients in a nonreactive bowl; cover and refrigerate for at least 1 hour to allow flavors to blend. Serve with fish, chicken, or pork.
