Recipe for Emeril Lagasse's Minty Green Peas. This is a classic flavor combo that you've just got to try!

Ingredients

  • 2 to 3 quart saucepan with a lid
  • measuring cups and spoons
  • wooden spoon
  • cutting board
  • chef's knife
  • large slotted spoon
  • oven mitts or pot holders
  • Ingredients:
  • 2 tablespoons unsalted butter
  • 1/4 cup minced yellow onion
  • 1 pound frozen green peas, not thawed
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon finely chopped fresh mint

Directions

  1. Yield: About 3 Cups
  2. 1. Melt the butter in a medium saucepan over medium-high heat.
  3. 2. Add the onion and cook, stirring, until soft, about 3 minutes.
  4. 3. Add the peas and water and bring to a boil.
  5. 4. Reduce the heat to medium-low, cover the saucepan, and simmer until tender, about 4 minutes.
  6. 5. Remove from the heat.
  7. 6. Add the salt and mint and stir.
  8. 7. Using a slotted spoon, transfer the peas to serving plates.
