Recipe for Egg Salad Stuffed Tomato. A stuffed tomato makes a quick and easy, nutritious lunch. This recipe is also a great way to use leftover Easter Eggs.

Ingredients

  • 6 hard boiled eggs, peeled
  • 1/4 cup mayonnaise (or light mayonnaise)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/4 pound arugula
  • salt and pepper to taste
  • cayenne pepper to taste (optional)
  • 4 large tomatoes
  • lettuce leaves for garnish

Directions

  1. Finely chop eggs and stir in remaining ingredients. stuff into the hollowed tomatoes. Serve on a large lettuce leaf.
