Recipe Drunken Cornish Game Hens. Rum, honey, and lime juice flavor this quick, easy, low fat and delicious recipe.


  • 4 rock Cornish game hens
  • 4 tablespoons dark rum
  • 1/4 cup lime juice
  • 4 tablespoons honey
  • 4 cloves garlic, minced
  • 2 teaspoons salt, divided
  • 1 teaspoon coriander
  • 1 teaspoon pepper


  1. Preheat oven to 350 degrees F. Wash hens and pat dry. Mix together rum, lime juice, honey, garlic, and 1 teaspoon salt. Rub mixture all over hens and marinate in refrigerator for at least 30 minutes.
  2. Transfer hens from marinade to a shallow baking dish and pour marinade over hens. Sprinkle skin of hens with salt, pepper and coriander. Roast hens for about 35-40 minutes or until done, basting frequently with pan juices.
