This colorful curried chicken salad recipe makes great use of nectarines when they’re in season. You can also substitute peaches or even halved purple or green grapes, if you like.

Ingredients

  • 3 cups boneless cooked chicken breast meat, cubed
  • 1/2 cup chopped celery
  • 1/4 cup water chestnuts, chopped
  • 2 cups diced nectarines
  • 1/4 cup finely chopped red onion
  • 1/3 cup coarsely chopped toasted pecans
  • Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons curry powder
  • 1 tablespoon honey
  • Kosher salt and freshly ground black pepper to taste

Directions

  1. Combine chicken, celery, water chestnuts, nectarines, red onion, and pecans in a mixing bowl and toss to combine
  2. In a separate bowl, whisk together dressing ingredients
  3. Pour dressing over chicken-and-nectarine mixture and toss gently to coat
  4. Let chill for 1 hour to allow flavors to blend
