Recipe for Barbecue Brisket of Beef. Here's a great recipe for a traditional barbecued brisket - cooked low and slow.


  • 1 beef brisket, 4 pounds
  • 1 cup dry white wine
  • 3 cups apple cider
  • 1/2 cup honey
  • 2 tablespoons Dijon style mustard
  • 1/2 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon whole coriander
  • 2 sprig fresh thyme
  • 1 tablespoon minced garlic


  1. Combine the wine, cider, honey, mustard, soy sauce, brown sugar, garlic, ginger, coriander, and thyme in a Dutch oven or heavy roasting pan. Add the brisket, cover tightly, and place in the oven. Heat oven to 350 F and roast for 2 hours. Remove the brisket from the roasting liquid, cover, and set aside.
  2. Transfer the roasting liquid to a medium saucepan over medium heat until it has reduced to a glaze.
  3. Using a kettle-style grill, light 15 to 20 charcoal briquettes and add small chunks of mesquite and hickory to one side of grill. Arrange the brisket on the grill so it is on the opposite side of the burning coals. Paint with the glaze. Cover the grill and smoke the brisket 2 to 3 hours, or until tender, turning the meat and coating with the glaze every 30 minutes. Add charcoal or wood as necessary or maintain temperature at 225 F. Remove the brisket from the grill and allow it to rest 15 minutes before carving.
