Recipe for low fat Apple Cabbage Slaw Veronica. This recipe is a spa cuisine favorite at The Oaks in Ojai and The Palms in Palm Springs, and of its owner Sheila Cluff.

Ingredients

  • Salad:
  • 1 1/2 cups cabbage, grated
  • 1/2 cup oranges, sectioned and sliced
  • 1/2 cup grapes, halved
  • 1/4 cup celery, thinly sliced
  • 1/2 cup red apple, cored and diced
  • 6 large whole lettuce leaves
  • Dressing:
  • 1/2 cup non-fat yogurt
  • 1/2 teaspoon freshly grated lemon zest
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon honey

Directions

  1. 35 calories per serving
  2. 8 gram carb
  3. Combine all dressing ingredients and mix well. Toss together all salad ingredients except lettuce leaves. Just before serving, Toss salad with dressing and place each serving on a lettuce leaf.
