Ingredients

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup confectioners' sugar, divided use
  • 21/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup amaretto liquer
  • 3/4 cup finely chopped almonds (optional)

Directions

  1. Preheat oven to 350 degrees F
  2. Cream the butter and 1/2 cup of the confectioners' sugar in a medium-sized mixing bowl until smooth
  3. Stir in the flour and salt until well blended, and then mix in liquer
  4. Fold in chopped almonds, if desired
  5. Roll the dough into walnut-sized balls
  6. Place the cookies 2 inches apart on the cookie sheet
  7. Bake 8-10 minutes
  8. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely
  9. Roll cookies in remaining 1/2 cup of the confectioners' sugar while they are still warm
