Your guests will love munching on these fabulous, super veggie nachos while watching the big game.
On Game Day, nachos are the perfect game-watching food. Everyone can dig in, taking as little or as much as they want—all without needing to pause to cut or even use a fork.

These super veggie nachos are loaded up high with red bell peppers, red onions, green onions, jalapeños, black olives, lettuce, tomatoes, and avocadoes. And, of course, there is the requisite cheese and optional dippers—salsa, guacamole (you can never have too much avocado!), and sour cream.

Super Veggie Nachos

Serves 6

  • 4 cups tortilla chips
  • 1/2 cup chopped red bell peppers
  • 1/2 cup finely chopped red onion
  • 1 green onion, chopped
  • 1 jalapeño, chopped (seeded, if you want less heat)
  • 1/2 cup sliced black olives
  • 1 cup sharp cheddar cheese
  • 1/2 cup shredded iceberg lettuce
  • 1/2 cup fresh diced tomatoes
  • 1 avocado, diced
  • Salsa, guacamole, sour cream (optional)

  1. Preheat the oven to 350 degrees F.
  2. Arrange the tortilla chips on a large, shallow oven-safe dish (alternatively, you can line a baking sheet with aluminum foil and spread the chips on that); sprinkle with red bell peppers, red onion, green onion, jalapeño, and black olives taking care to evenly disperse them around the chips; top with cheddar cheese.
  3. Slide the baking dish into the oven for 7 to 10 minutes, until the cheese is all melted. Remove from the oven.
  4. Sprinkle the nachos with shredded iceberg lettuce, tomatoes, and avocadoes. Serve with bowls of salsa, guacamole, and sour cream (with spoons), if desired. Serve.
  5. NOTE: If you use a baking sheet, you may either serve the nachos on that, or carefully transfer the nachos (on the foil) to a tray.


These nachos are also great with additions of diced steak, chicken, or black beans. About 1/2 to 1 cup is perfect.
Tired of cheddar? Mix it up by topping these with Monterey Jack cheese instead.
